Ớt bột Hàn Quốc (hay còn gọi là Gochugaru) là một loại gia vị quan trọng trong nấu ăn của người Hàn, được sử dụng nhiều trong các món banchan ăn kèm, súp, món hầm, xào, muối kim chi và làm gochujang.

Gochugaru có màu đỏ rực và có vị cay nhẹ đến trung bình cùng một chút ngọt, thường được chia làm 2 loại là ớt bột vảy và ớt bột mịn. Cả hai đều được sử dụng linh hoạt trong nhiều món ăn và tùy theo nhu cầu nấu ăn mà chọn lựa dạng ớt bột phù hợp. Ví như các món ăn cần có kết cấu mịn, ớt bột có thể hòa tan khi chế biến thì ớt bột mịn sẽ là lựa chọn hoàn hảo, hoặc khi muối kimchi và nấu các món cần thấy rõ sự hiện diện của ớt thì sẽ ưu tiên dùng ớt bột vảy.

Ớt bột vảy Ottogi là loại coarse gochugaru làm từ 100% ớt được phơi khô bởi ánh nắng mặt trời nên màu sắc và hương vị hấp dẫn hơn. Ớt được xay nhỏ, hạt bột còn hơi to, dẹp và có màu đỏ sậm.

Ớt bột vảy Ottogi được sản xuất theo qui trình nghiêm ngặt và kĩ lưỡng, trải qua nhiều công đoạn như rửa sạch, loại bỏ tạp chất và các quả ớt kém chất lượng, tiệt trùng, rà kim loại…đảm bảo mang đến một sản phẩm ớt bột vảy chất lượng và an toàn. 

Với loại ớt bột này, bạn có thể dùng để muối những mẻ kim chi đỏ rực đẹp mắt có hương vị cay thơm vừa vặn không quá cay, hoặc chế biến các món ăn như bào tuộc xào cay, salad dưa chuột, canh đậu hũ non (sundubu jjigae), cá thu đao kho tộ (kkongchi-jorim),...
